During his many years involved in the meat industry, he has travelled extensively through out World.

Among many of his roles have included, preparing meat displays and presentations to members of the Royal Family, including HRH Queen Mother, HRH Prince Charles and The Duke of Edinburgh, numerous British and European members of Parliament, and at the British Embassy in Paris.

He has arranged and assisted in the preparation of meat for many formal occasions, including Westminster BBQ, British Meat Dinners held throughout Europe, Chef of the Year and the British Meat Awards.

One of Viv’s real passions is with meat photography and food styling. This has led to the involvement and production of many cutting manuals, instructional step-by-step guides, videos, DVD’s and television advertising. Such work has included - production of Supermarket Fresh Meat Manuals, Training Videos for BBC Skills Bank, MLC, Quality Meat Scotland, EBLEX and BPEX, Meat photography for the Pig Improvement Company (PIC), Anglo Beef Processors (ABP) and Genuine Jersey. Television advertising included the British Meat ‘Recipe for Love’ and the ‘Tim Nice but Dim’ campaigns. 

Viv’s passion for butchery and knife skills has had him involved in a wide range of training for - Ministry of Defence- Army butchers, major supermarkets groups, -Somerfield, Asda, Tesco, Sainsbury, Marks & Spenser’s and Selfridges and many farmer groups. Part of his travelling has also included training groups of butchers in Spain, France, Italy, Greece and a group of sheep producers in Minnesota USA and Chefs in South Africa.

For the past 14 years he has attended the major International food fairs in Cologne, Paris, Palma, Berlin, Athens, and Barcelona displaying and demonstrating meat cuts and products.

He is regularly seen judging, at skill competitions and product evaluations and from 1999- 2002 was the official training coach for the British team, in the International Young Butchers Competition, held in France, Germany and Switzerland.

His meat knowledge and knife skills have enabled him to work along side many Celebrity Chefs including Paul Baccouse in France, Brian Turner, Anthony Worral Thomson, Ainsley Harriot, Gordon Ramsay, Phil Vickery and Colin Capon. He has also carried out regular cutting presentations at major Catering Colleges through out Europe. 

His main belief is that the skills of knife work and meat presentation, gained over the years, should be passed on, so as to proudly promote the virtues of this aincient craft, and to keep meat the central part of a balanced meal. 

In September 2003 he was awarded the freedom to the city of London, and admitted as a liveryman, to the Worshipful Company of Butchers in October 2003.

In 2004, he became a team member of the Best of British BBQ team, Competing internationally in Germany, USA and Canada,  gaining major wins at the Jack Daniels Invitational world Barbeque Championship, in Lynchburg Tennessee and Dillon, Colorado, USA. In 2008 he became a certified judge for the Kansas City Barbeque Society.

Having worked for the Meat and Livestock Commission for 25 years is now an Independent Consultant to the meat industry.  

Viv has 2 children and is based in Towcester, Northamptonshire.
