Mathew Shropshall - UCB Chef Lecturer & Creative Development Chef

Having trained at the Birmingham College of Food, Mathew was awarded NVQ 1, 2 & 3 Qualifications in Hospitality & Catering, Also gaining Caterer & Hotelkeeper Student Chef of the Year 1996 & 1997.

 In 1998 Mathew gained a H.N.D. in Hotel, Catering & Institutional Management, Currently will finish his BA Hons Degree in Hospitality Business Management in 2009.

Michelin star Experience at Le Manoir, Waterside Inn, Strasbourg Chateau in France, and New York Restaurant in USA, Being Finalist of the Roux Scholarship Twice.

In 1999 Mathew became Chef/Company Director of the Gastro Pub Royal Oak with national awards including Pub Restaurant Chef of the Year (Twice), Publican Newcomer of the Year & Caterer Acorn Winner 2002. (Top 30 of the U.K.)

Mathew currently holds more than 98 cookery awards and was awarded world master chef status in 2007, along with British Chefs Federation Louis Cipolla award 2008 & Fellow of the Craft Guild of Chefs.

To date Mathew has produced 3 cookery DVD’s and 2 cook books along with countless recipes for customers waitrose, Sainsbury’s, Marks and Spencer & Asda.
Mathew is the Captain of the Best of British BBQ Team which form in 2004, 11 International competitions around the world, with success last year’s at the Jack Daniels World BBQ Championships -  1st place in the World!

 Mathew is a member of the Culinary Academy competing for the United Kingdom including the Culinary Olympics in Germany where he won Bronze Medal- 3rd in the world!

Having sold the Award winning Pub Restaurant Mathew now works in New Product Development, creating innovation in food for retail & Commercial sector.

Clients include Steelite International, British Pepper & Spice, Glennans, Marston’s, Scottish & Newcastle, EBLEX, Mc Cains, Market square & NPD Direct Ltd.

 Mathew is also Chef Lecturer at University College Birmingham, with over 10 years teaching experience at The University College Birmingham (Formerly the Birmingham College of Food) regarded as the top Catering University in the United Kingdom. Mathew over sees JCA, NVQ, VRQ & BTEC qualification.
